This week Jennifer of Running With Food chose Fried Rice. Brandon and I LOVED this recipe. It was so fast and easy and I thought it tasted great. I used chicken instead of tofu, but I may use shrimp next time. I added broccoli and peas. Yum!

Mmm, I love a "one pot" dinner, and you made a good call to sub the tofu with chicken. Isn't is great to have another easy weeknight dinner that you both like? Food blogging has been good for that!

Great idea to use chicken instead of tofu and to add peas and broccoli! I wanted to amp up the veggie quotient too, so I'll do that next time. We loved this one!
