At the end of most of her recipes, Dorie gives suggestions about altering the recipe. This cheesecake has a TON of suggestions. One of my favorite desserts of all time is key lime cheesecake with chocolate crust. Since I made this for a Christmas party, I made regular cheesecake on a chocolate crust, since I think some people make not like lime....
I really liked this recipe. It was relatively easy and VERY delicious. The only not-so-fun part was the long cooking then propping the door open time following by cooling to room temperature and then refrigerating for several hours. It's not a quick thing to make, but it's very worth the time it takes.

Your cheesecake looks great. It thought about using lime too, but decided against it b/c I didn't have any limes at home and didn't want to run to the store again.
How wonderfully tall! I was irritated by the long cooking / cooling time too. Luckily, it was worth it :)
Your cheesecake looks beautiful and was definately worth the long wait! Many years ago I made a key lime cheesecake with a strawberry butter topping. The flavors were amazing! I'm going to dig out that recipe and combine it with Dorie's. Yum!

It looks beautiful! I bet it was the hit of the Christmas party. Your key lime version sounds great too. I loved the recipe as written so much that I might have a hard time branching out. I agree that this isn't something that you can just whip up - there's a lot of waiting time involved!

I thought the key lime with chocolate crust sounded fabulous, but my husband insisted I make it plain. I'll try that way next time. It looks delicious!
Your cheesecake really looks good and I like the idea of a chocolate crust with lime. So glad everyone liked it. I always think of one of those throw it in the oven and "forget it" kind of projects when it takes a while. You can always go off and do other projects.

Very nice looking cheesecake. I was contemplating adding some citrus to mine, but ended up going with the basic recipe.
Love the way yours looks with that sassy chocolate crust! The timing becomes a factor when you start cooking at 10 or 11 at night (without adequately reading the recipe first). Just saying.
Lime sounds great to me. I added just a dab of lemon (imperceptible really) to approximate the New York cheesecake flavor.
