Summer Fruit Gallettes

Another recruit- YAY!!! Check out my friend, Peggy's, new TWD Blog- Pantry Revisited!!! She should show up on the new member list next week. And, also please visit Julie's blog- Peanut Butter and Julie. I LOVE this club so much and I am so happy to have two friends at work who are in it now, too!!!

This weeks recipe came from Michelle of Michelle in Colorado Springs. I had never even heard of a gallette!! I thought the recipe called for 8-10 peaches, 8-10 nectarines, 8-10 plums AND 8-10 apricots. My husband bought me THIRTY pieces of fruit!!!!! I made mini gallettes and one larger one. I thought these were very good. I've made this pie crust before and it is VERY good- the best pie crust I have ever had. I liked this recipe a lot and will likely make it again. The next time, I will probably make one large gallette. I had a little trouble with the mini ones because the custard spilled out around some of them, making it impossible to get them off of the pan.

30 pieces of fruit!!! LOL. That is a great story and a great husband! The mini galettes are adorable, and what a great effort! I love the crust too. Great job!

No worries on having so much fruit, it's good fo you! Im glad you liked the galette and the crust. I need to try this crust recipe out. Im afraid to get away from my crust I've used for years, but Im gonna go for it!

That's a whole lot of fruit, what a guy! I think your little mini galettes are so cute though!!! I did mine with apples and blackberries and it leaked a tiny bit too, but I really loved this recipe!

Awww, I love that your husband picked up 30 pieces of fruit, too funny! I love your mini galettes, I thought of that after I made my mis-shapen big one. Yours are too cute :) Congrat on the new baking recruits too, that must be so much fun for you guys, you can have a big baking party at work!

I think mini Galette's were the way to go. The big one was impossible to transfer to another dish. Not to mention, I think you could have a better appreciation for the dough itself in the mini form. Good job!!!

That is so funny! The first few times I read this recipe I thought I needed all the fruit too, but then I figured it probably wouldn't fit. lol I love your minis they are so cute!

I had a lot of problems with the mini galettes as well! Maybe it wasn't meant to be! I love the abundance of fruit, though!

I love the look of the mini galettes. Something about them reminds me of childhood. Time for me to throw a tantrum "I want a mini fruit galette!!!!" ;) Great job!

What a lot of fruit! And what cute mini-galettes!

Dorie's pie crust is wonderful, isn't it?

For your next try at galettes, I suggest you make the area in the center where you put the filling a little smaller, and fold up more of the outer edge. That will help to hold in some of the juice. Also, it really helps to chill or freeze them for a little while before baking, as Dorie suggests. The dough tends to slump less.

I love the idea of mini galettes; kind of the French equivalent of the Danish sweet roll.
